I’ve enjoyed this dish many times while growing up, yet this first time savoring it here in Nagasaki brings back a quiet flood of warm memories.

Crispy golden fried noodles piled high atop stir-fried cabbage, bean sprouts, tender pieces of seafood and vegetables in a rich, savory sauce. The perfect contrast of textures and comforting Nagasaki flavors.

Stopped.

Sat down at the table.

Savored each warm strand slowly, one mindful bite at a time.

To humbly receive this meal and give thanks.

Thanks to the chef who prepared it with care tonight, to the farmers, fishermen, and all the quiet hands in the supply chain that brought these ingredients together — and most of all, thanks to the life freely offered so that we may continue.
